Thai green curry

Recipe

Slice assorted vegetables (I used a red pepper, three carrots, a medium onion, and some greenbeans).

Drain and dice tofu into 1/2 inch cubes.

Stir fry everything over high-heat. (Start with the tofu so it will cook nice and firm.)

When cooked add 1) can lite unsweetened coconut milk, 1/4 tsp salt (or a few dashes of fish sauce), 1/4 tsp sugar, and about 2 tsp of green curry paste (Thai Kitchen brand). Stir to mix everything up and let cook down for about 3-5 minutes.

Serve over jasmine rice.
